Tomatillo Salsa

This is by far the best tomatillo salsa recipe I’ve ever had.  I got the original recipe from a cooking class I attended in Gilbert, AZ; however, I have made  a few changes to make it my own.  We love this so much and we often joke to forget the chips and just give us a straw.

Tomatillo Salsa

2 pounds green tomatillos (about 15)
2 jalapenos
1 tbl roasted garlic powder (this is not reg. garlic powder…it’s made by The Spice Hunter) or 8 cloves garlic
1 sweet onion
1/2 bunch fresh cilantro, leaves only
1/4 cup sugar
1/4 cup chicken broth powder**
1 cup water**
sea salt, to taste

1.    Grill tomatillos (papery shell removed) and jalapenos until darkened.  Put the jalapenos into a plastic bag for 5 minutes and then peel off darkened skin.  Let everything cool.

2.    Place onion and garlic in food processor. Process until finely chopped.

3.    Add remaining ingredients and process until desired consistency.

4.    Season with extra salt and/or sugar if desired.

**I know this is an odd ingredient, but there is no chicken in the broth powder (I get mine from Frontier).  The best substitute would probably be 1 cup vegetable broth in place of the water and powder.

One of our favorite things to do is go to our local peach orchard and pick fresh peaches from the trees every summer.  The best part is that you can eat as many as you want while you are out in the orchard.  We usually come home with several flats of peaches and besides the usual freezing for ice cream or just eating them, we also make this Peach Julius.

4 ripe peaches, peeled and cut

1/2 cup of milk

1/2 cup of orange juice

1 tsp vanilla

1-2 tbls honey (opt. depends on the ripeness/sweetness of the peaches)

a couple handfuls of ice

Put everything in blender and blend until smooth and frothy.  Serves 2 adults and one child.

Home made chocolate syrup! No doubt that if you have children then you have the big name bottled stuff in your fridge…but what’s really in there (chemicals, extra sweeteners, HFCS)? I can tell you that mine has 4 ingredients and tastes even better. I bet you are wondering how long it takes to make….well if you have 5 minutes to spare and a basic stocked pantry you can make it right now!

Chocolate Syrup

1 1/2 cups granulated sugar

1 cup cocoa powder

dash salt

1 1/2 cups water

1 teaspoon vanilla

1. Stir together.

2. Boil 2-5 minutes, stirring rapidly, until sauce begins to thicken.

3. Store in the fridge. Makes about 2 cups
